Most people know M\u00f8ns Klint, but now there’s another reason to visit the island: Kalum Winery (formerly Brut de M\u00f8n), a world-class sparkling wine. <\/p>

The western part of M\u00f8n offers optimal conditions for wine production, where reflection from the water provides 10-30% more sunlight and significantly extends the growing season. Hans Christian Ambjerg and his wife established the Brut de M\u00f8n vineyard in 2019 on Vestm\u00f8n, a location carefully chosen for its unique microclimate and soil. They planted 8,000 vines in 2019 and a further 2,000 in 2021, bringing the total number of vines planted to 18,000. In 2021, the winery changed its name to Kalum Winery and is now owned by five families including the Ambjerg family. <\/p>

The first harvest at the winery took place in 2020 and exceeded all expectations. It was surprising because the grapes were not expected to ripen so early. Their success with the first harvest emphasized the importance of their choice of location and their decision to grow grapes in such a unique environment.<\/p>

An important factor in their success has been the south-facing slope close to the water, which provides a reflection from the water and thus more hours of sunshine for the grapes. This unique microclimate on M\u00f8n has allowed the grapes to ripen several weeks before the rest of Denmark.<\/p>

Kalum Winery is rooted in sustainable principles. Production focuses on minimizing tannins and preserving the natural character of the grapes. Hans Christian Ambjerg describes the process: “If you make high quality, customers will come back again and again.” <\/p>

Hans Christian Ambjerg has a vision: M\u00f8n must become known as Denmark’s wine island. Kalum Winery primarily produces sparkling wines with Chardonnay as the main grape, but also the other classic champagne grapes Pinot Norir and Pinot Meunier. The grapes are pressed in a controlled process where the pressure is gradually increased in cycles over two hours. Only 55% of the juice is extracted to avoid over-extraction of tannins, which can make the wine bitter. <\/p>

After settling in steel tanks, the base wine is fermented in oak barrels. This process, known as micro-oxidation, makes the wine softer and rounder in flavor. Bottle fermentation (M\u00e9thode Traditionelle) takes place over 12 months and gives the wine its fine bubbles and complex aromas. <\/p>
